Natamycin is a natural polyene macrolide produced during the fermentation process of Streptomyces natatis. Because of its strong inhibition of mold and yeast, it is often used as a food preservative, and is widely used in meat, dairy products and fruit and vegetable preservation. Natamycin can bind to sterols on fungal cell membrane and cause cell death. Natamycin also inhibited the spore germination and mycelium growth of botrytis cinerea, penicillium diffusum and anthrax oxysporum.
